Cantina Pedregal

Cantina Pedregal in Folsom, California, was a contemporary Mexican cantina that aimed to transport diners to the rich culinary landscapes of Northeastern Mexico. Led by Michelin-recognized chefs Patricio Wise (of Nixtaco) and Brad Cecchi (of Canon), the restaurant offered an elevated and authentic dining experience. Guests could anticipate a menu featuring family-style, contemporary Mexican cuisine, highlighting meat-centric dishes like expertly prepared beef, goat, and pork, all complemented by house-made corn and flour tortillas. The culinary vision extended to inspired craft cocktails and a thoughtfully curated selection of wine and beer.

The ambiance at Cantina Pedregal was designed to be warm, convivial, and inviting, reflecting the casual gathering places found in Monterrey, Mexico, where co-owner Patricio Wise grew up. The interior boasted an upscale yet approachable feel, incorporating organic materials like stone, wood, and ceramics to create a sense of familiarity and comfort within a contemporary and vibrant space. With careful attention to detail, from custom-made elements to beautiful Mexican ceramics, Cantina Pedregal sought to be more than just a restaurant; it aspired to be a neighborhood gathering spot where friends and family could connect over exceptional food and drinks. While Cantina Pedregal closed its doors on April 19, 2025, the space has transitioned into Nixtaco, offering a more casual yet equally acclaimed experience from the same passionate culinary team.
